The last couple of times we have had people over, I have made these Healthy No-Bake Cookies for dessert. You really can’t go wrong with these ingredients! So.. is it bad that I had one with breakfast this morning? Nah, I told myself it has oats… Breakfast of champions! One thing, I always have a problem with no bake cookies hardening, not real sure why. So… after I spoon them up, I stick them in the fridge for 20-25 minutes, and then they are perfect! And let’s be honest I still ate them like pudding before I popped them in the fridge!
Healthy No-Bake Cookies

1 cup natural peanut butter (I like the kind that only has either just peanuts, or no more than three ingredients)
3/4 cup honey
1/2 cup coconut oil (or butter if you prefer)
2 teaspoons vanilla
2 1/4 cups quick oats
6 tablespoons cocoa powder (I highly prefer the dark cocoa powder)
Combine first three ingredients in a sauce pan and warm gently on stove top. If you’re using raw honey, you’ll want to be careful to warm it only until the coconut oil melts and the peanut butter softens. No reason to heat the life out of your honey!
Next, add in the vanilla, oatmeal, and cocoa, and stir well.
Drop by the spoonful onto a wax lined plate and let cool. Store in an airtight container in the refrigerator – if they last that long.
