This is a good option if you have a gluten intolerance or if you are trying to cut back on the carbs. If you like coconut you will like these. I am a fan, and the whole family approves too!
Pumpkin Chocolate Chip Muffins – Grain Free!

1- Set oven to 350 degrees
2- Grease a muffin tray
– 4 eggs
– 2 TBS maple syrup
– 3 TBS coconut oil melted
– 3/4 cup of pumpkin purée
– 1/3 cup almond meal (AKA almond flour)
– 1/4 cup of coconut flour
– 1/2 tsp baking powder
– 1/2 tsp baking soda
– 2 tsp pumpkin pie spice)
– 1/3 cup dark chocolate chips
1- Mix wet ingredients in a large mixing bowl.
2- In a separate bowl whisk together dry ingredients, and add to the wet ingredients combining.
3- Fold in chocolate chips.
4- Bake for 20-25 minutes.
5- Cool completely. Enjoy with a pat of butter or ghee on top!
