This recipe was introduced to me when I was working out with my trainer, Debbie Portell. She always emphasized that no matter what type of workout you are doing, you will not get the results you want unless you are fueling your body with healthy foods. Adding a few ingredients to the apple makes for a yummy side dish or snack. My little one picks the almonds off but loves the apples. For me, the almonds are my favorite part and I usually add a few extra. When I am running out of fresh produce towards the end of the week, I make this for a side because I always have apples and all of the other ingredients on hand.
- 1 fugi, pink lady, or honey crisp apple (my favorite is pink lady)
- Handful of sliced almonds
- 2 tsp olive oil
- 1-2 tsp cinnamon
- 1 stevia packet
- Combine the ingredients in a skillet and cook on med-low heat until the apples are soft (5-10min).
