A cookie that is good for you and still tastes delicious…no way, not possible…wrong, it is possible! These Chocolate Chip Peanut Butter Cookies are amazing! With only a tablespoon of flour and no sugar! They seriously only lasted one day at my house.
Anytime I find a cookie recipe that does not use refined sugar and flour I try it! I just have a hard time believing that you can make a ‘healthy’ cookie and it can still taste good and be a normal cookie texture! When I saw that this recipe only used a tablespoon of flour I was sure it wasn’t going to work out. How do you make a cookie with only a tablespoon of flour. Well it worked and they were awesome! Very soft, creamy, and surprisingly sweet! The kids and I snacked on them all day until they were gone. It’s like that chip commercial, bet you can’t just have one!
- 1/2 cup creamy peanut butter
- 1/4 cup maple syrup (You could use honey as well for a slightly different taste)
- 1 egg
- 1 tsp vanilla
- 1 tsp baking soda
- 1/4 cup quick cooking oats
- 1 tbsp whole wheat flour
- 1/3 cup chocolate chips
- Preheat oven to 375F. Beat together peanut butter, maple syrup, egg and vanilla on medium speed until combined. Mixture should be smooth and very moist. Next gently stir in the rest of the ingredients until well combined. You can chill dough in refrigerator (or outside if it’s cold!) for about 10-15 minutes for a smoother texture. I was rushed and did not, they still tasted great and came out with a good texture (it is a preference). Line two baking sheets with parchment paper and roll dough into small balls. Gently press on the balls to flatten, as they will not spread too much. Bake for 8-9 minutes, until golden brown. Remove from pan after baking and cool on cooling rack. Store in airtight container for 5 days or on your counter for one day as we did, because that is how long they lasted!
