Kids are getting out of school, pools are getting set up, parties are being planned. You know what that means…. IT’S SUMMER! When I think of summer I think fresh and fruity! There is nothing better than a nice cold fruit drink on a hot day. And of course snacking on fruit by the pool or at a party is ideal. This Fruit Dip and the Strawberry Mint Lemonade are what you need to start your summer off right! First of all, this fruit dip is super delicious, we can’t stop eating it! It seems like so many fruit dips are made with cool whip or just loaded with refined sugar. I decided to create my own. I pretty much just thought of some of my favorite flavors, put them together and wa-la! Perfection.
My daughter just graduated from Preschool (I don’t want to talk about it, I’m just going to ignore that this is happening) and the school had a BBQ afterwards with all the water fun you can imagine. It was the perfect opportunity for me to bring this fruit platter with a super yummy fruit dip, and some delicious Strawberry Mint Lemonade. I purchased both the Rubbermaid Party Platter and the Rubbermaid Pitcher at Kroger. The platter is divided into four sections and has an inner container to hold the dip. I loved that I could put the top right over the whole thing and I was ready to go! (see picture below) It was so easy to transport and it was nice that it’s plastic and I didn’t have to worry anything happening to it at the party.
The pitcher was also perfect for this get together. It holds a lot! I also didn’t have to worry about something happening to it because it’s plastic! And bonus, it comes in my two favorite colors Calypso Coral and Lagoon Blue. They just say “summer” to me. Let’s talk about this lemonade. It’s one of our favorites. Have you ever had lemonade that doesn’t have a cup or two of sugar in it? It’s tough to find. Well look no further! This will be your new go-to drink this summer. Strawberries, water, lemons, honey and mint, that’s it! I have mint growing in my backyard and I was dying to use it for some lemonade. It did not disappoint! My whole family loves it, and has been asking for more. The strawberries are so great right now, we will probably be making this a lot!

Ok, I had to share this photo. I got some monstrous strawberries! No, I did not cut it up and share it, I needed it all to myself, and it was delicious.

You Might Also Like:
- 1 cup yogurt (I use whole plain)
- 8 oz cream cheese, softened
- 1 tsp vanilla
- 2 tablespoons maple syrup
- zest of 1 lemon
- 1 1/2- 2 lbs fresh strawberries, halved
- 4 freshly squeezed lemons
- 3/4 cup honey
- Mint (as much as you prefer)
- With a hand mixer, blend the yogurt and cream cheese.
- Add the vanilla, maple syrup and lemon zest.
- Blend well.
- Refrigerate for a couple of hours (not totally necessary if you are in a rush!)
- Depending on how big your blender is you may have to add most of the water last, you could just add it to your pitcher and mix it up.
- Add strawberries, lemon juice, honey and as much water as you can to a blender. And blend until smooth. (you can decide if you want your mint chopped up or just put whole leaves in at the end)
- Add remaining water to the pitcher and mix well.
- Now go sit by a pool and enjoy!
