If you don’t know this about me already, breakfast is my favorite meal, and usually my biggest. I definitely look forward to this breakfast burrito often! It seems like I always have this after a long run in the morning. Probably because I have a lot of time to think about what I’m going to eat when I get back! This has everything my body needs after a workout. But don’t get me wrong this is not exclusive to a post workout meal! In fact, you could have this any time of the day.
I always have one egg and one egg white, but the great thing about breakfast burritos is you can put in whatever you want! This is my favorite combo though. Especially when it is cooked on the skillet to give the tortilla the perfect crispness. Although I also day dream of adding things like caramelized onions and sauteed peppers, but I have these four little people who are pretty eager to eat in the morning, so this is what works for me! And don’t think those green onions are just to make it look pretty! They bring such a great flavor. This doesn’t take very long to put together, and it fills me up until lunch.
My kids like breakfast burritos too, each of theirs looks a little different. They can help choose what goes in, and everyone’s happy:)
You might also like:
- 1 whole wheat tortilla
- 1 egg and 1 egg white, whisked
- half an avocado
- salsa or chopped tomatoes
- scoop of plain greek yogurt
- 1-2 tablespoons green onions, chopped
- Heat skillet to medium heat.
- Scramble the eggs.
- Place tortilla in skillet.
- Add all the ingredients, and fold into a burrito.
- Hold together and cook until golden brown, flip and cook the other side.
