I am always looking for ways to satisfy my sweet tooth without tons of sugar or unhealthy ingredients. I always feel sluggish the next morning if I overindulge. So, this healthy cherry pecan dessert is a great way to have a sweet treat in a lighter, healthier way. Lately, I have been trying to eat a smaller meal at dinner and make lunch my bigger meal. Often times I am still a bit hungry before bed so not only does this provide the sweetness, it also makes me feel fuller.
This is one of those recipes that you can make your own by using any fruits or nuts. I almost always have frozen fruit on hand. When my kiddos want that snack too close to dinner I offer it to them. Because it is frozen, the fruit takes them longer to eat and doesn’t fill them up right before we sit down to eat.

- 1 cup frozen cherries
- 1/4 cup pecan halves
- Defrost your frozen cherries in the microwave. You want them to be warm and there to be juice at the bottom of the bowl.
- Place pecans in a small skillet. Add stevia and cinnamon to taste. I do a light sprinkle of stevia and a generous amount of cinnamon. Toast the pecans on low-med heat, stirring frequently so they do not burn and the pecans get coated with the cinnamon/stevia mixture
- Top the warm cherries with the toasted pecans and enjoy!
