It has been a busy holiday weekend with lots of fun, friends, and family! The last thing I want to do is cook or clean up another meal! However, I still have three hungry people I need to feed! These 4 Ingredient Crock-Pot Tacos are perfect! They are easy to make; put the ingredients in the crock-pot and turn on! And most importantly they are so flavorful and delicious!
We love tacos in our house because they are good, but also because they can be customized. Everybody will eat the meat and the shell…and the cheese of course. I have one that prefers avocado and another that prefers tomatoes. One likes the salsa on it and the other likes to dip it. Even though they are picky about how it is eaten I feel that in the end a meal of tacos is always a balanced meal!
I try to eat my left overs for lunch, but I am learning that I am actually not a big left over fan and usually throw them out by the end of the week. After we ate these for dinner I ate them everyday that week for lunch. Some days with a shell, some days as a salad and I even put a little meat in the kids quesadillas for lunch one day! These 4 Ingredient Crock-Pot Tacos are seriously the meal that just keeps giving….and it helps that they are yummy too!

- 6 boneless, skinless chicken breasts (I always put my chicken in the crock-pot frozen (thawed will work too). When added frozen I think it adds a little more liquid, so the meat doesn't get dry!)
- 2 cups salsa verde
- 1 bottle beer
- 2 teaspoons cumin
- Place all the ingredients in the crock-pot, starting with the chicken.
- Mix it up a bit.
- Cook for 3-4 hours on high heat or 7-8 hours on low heat.
- When done shred the chicken and enjoy!
