Isn’t peanut butter the best? If there is one thing that has been consistent in my life, it’s my love for peanut butter. My favorite snack growing up was a big spoonful of peanut butter (let’s be honest it still is!). I’ll admit, when I first switched to all natural peanut butter (the kind where the only ingredient is peanuts) I was nervous. I didn’t know if it would bring the same amount of joy. But honestly I prefer it now, and my kids love it as well. I have one child in particular who inherited my love of peanut butter, and who would also eat cereal for every meal every.single.day. So this peanut butter granola was heaven for her. This is basically like my Peanut Butter Oat Bars except it’s baked, and has a bit more oats and a splash of vanilla. My family still loves our classic granola as well. But it’s nice to have a couple of options, and plus this granola is super easy to put together!
You could definitely make this however you want. You could add some maple syrup, cinnamon, pecans or almonds. Basically however you like your granola. This is my simple granola so I keep it to just a few ingredients.

- 5 cups oats
- 1/2- 3/4 cup peanut butter, I like crunchy! (depends how much peanut butter you want)
- 1/2 cup honey
- 1 tsp. vanilla extract
- *You could spice it up even more by adding some cinnamon, maple syrup, almonds or pecans.
- Preheat oven to 275.
- Combine peanut butter and honey in a bowl or liquid measuring cup. Microwave for about 45 seconds, until the peanut butter starts to melt. Whisk peanut butter and honey. Add in vanilla and mix well.
- Add oats to a large bowl. Pour the peanut butter mixture over the oats and stir until well combined. Spread granola in an even layer on a rimmed baking sheet. Bake for 20 minutes, stir, and then bake 15-20 minutes until granola becomes light golden brown. Let cool completely on baking sheet. The granola will become crisp as it cools. Store granola in an airtight container for up to two weeks.
