This Sweet Potato with Chicken, Avocado and Salsa may become your new go-to meal. First of all, it’s delicious! Second of all, it keeps me full. When I have this for lunch I am full until dinner! I can’t think of anything else that keeps me that full for that long. Also, look at all the goodness that is going into your body with this meal. It’s fresh, filling, and fantastic!
Over Thanksgiving we went to Tucson to visit family, and my cousin-in-law, or whatever her title (I just call her my friend Beth) showed me her go-to breakfast every morning. She microwaves a sweet potato (because who has time to bake it in the oven?), then she puts a scrambled egg on top, and sometimes tops it with turkey sausage. A-mazing! I went home and started having that several days a week. I would either have it for breakfast or lunch. Then I started putting all sorts of things on it, especially when I ran out of turkey sausage! I have put steamed broccoli, with chicken sausage or an egg on top, peppers, any roasted veggie, basically the possibilities are endless here.
This is my new favorite lunch. I was inspired by my Sweet Potato Rounds with Guacamole. So you could definitely make guacamole out of the avocados and add tomatoes or salsa if you wanted. And for the chicken I either use a rotisserie chicken (so I can use it all week), chicken sausage or grilled chicken. I wish I could tell you that I made the rotisserie chicken and made the pico de gallo, but no, I just wanted to buy them so I could put it all together in a pinch! Although, it really isn’t hard to make a rotisserie chicken, I promise. If I can buy something that is just as healthy as making it, I will, because I feel like I spend half of my life cooking!

- 1 sweet potato
- 1/2 an avocado (save the other half for the next day)
- rotisserie chicken, chicken sausage, grilled chicken or shredded chicken (you could do that in the crockpot)
- Pico de gallo or any other salsa
- Wash the sweet potato, poke a couple holes in it with a fork, and microwave for three minutes. Turn it over and microwave for about a minute and thirty seconds.
- Top with chicken, avocado and salsa.
- Ta-da! Enjoy!
