Yay for super easy meals!! This is a great option for any time of the day. I could eat toast all day, every day! I make homemade Honey Whole Wheat Bread every week, and there is nothing better than homemade bread! Ok, homemade ice cream is up there too!
I like making a meal out of just one piece of bread, and putting something other than butter on it. Especially when it is healthy AND delicious! This is one of those super easy meals that you can throw together in just a minute. The only thing I made beforehand was the bread. This is toasted, but you definitely don’t have to! You can pack it for a cold lunch as well. In fact, sometimes I choose not to toast it even when I’m at home.
You can definitely make your own hummus, but you can just buy one of your favorites. I have tried this with several different types of hummus. I started out with traditional hummus, but decided I liked a little more flavor with it. I have recently enjoyed black bean hummus and mediterranean hummus with this. If you aren’t a hummus fan, you can skip it and spread the avocado on the bread and top with the peppers and feta.
You might also like:
- 1 piece of bread (I prefer homemade, but Dave's Killer Whole Wheat Bread is a good option too)
- 1 tablespoon hummus (black bean or any flavor of your choice)
- Roasted Red Peppers (I just buy the jar)
- 1/4 of avocado, sliced
- 1 tablespoon feta cheese
- Toast bread.
- Top with hummus, avocado, red peppers and feta.
