Anyone have hard boiled eggs left over from Easter? The Easter bunny came to our house and we had fun hunting for the eggs. My husband’s family always hid the hard boiled eggs as well as the plastic eggs when he was growing up. It is still so strange to me, because we never did that. Well, it’s become a tradition that is alive and well in our house. Let me first tell you that I love hard boiled eggs. I have a hard time sharing them because they go so fast! So, when we are on our Easter egg hunt I am frantically looking for the hard boiled eggs because I am worried we will lose them or that they will get cracked. I act like I am helping the kids find eggs, but in reality I am just being selfish and keeping my eggs safe! I’m glad I got that off my chest! Don’t judge.
And one more confession while I am at it. I am going through a lazy cooking stage. Anyone ever have that? I really genuinely love to cook and bake (hence the food blog), but sometimes it just sounds so overwhelming to make a good meal. So lately I have had very simple meals until my desire comes back (which it always does). So I figured I would share my go-to lazy meal, although you do have to have hard boiled eggs ready. But trust me the egg makes the salad!
Ok, and as much as I love eating hard boiled eggs just as they are, putting them in a salad is even better! Especially when it’s combined with creamy avocado, crunchy nuts and sugar snap peas and chewy dried cranberries or raisins. Oh, and don’t forget to add an apple in there as well! I have had this salad almost every single day for the past couple of weeks. I love it because it’s so filling, packed with nutrients, healthy fats and deliciousness. All the flavors and textures together are perfection. I used to combine balsamic vinegar and either olive oil or avocado oil for the dressing, but now I just use balsamic vinegar and I use a lot less calories and I don’t really notice a big difference.
This salad will keep for a couple of days if you want to double it. Avocado usually has two days until it’s not so good anymore.

- 2 cups spring mix lettuce
- 1 hard boiled egg, chopped
- 1/2 an avocado, chopped
- 1/4-1/2 of an apple, chopped
- handful of sugar snap peas, broken in half
- tablespoon of chopped pecans or any nuts
- tablespoon of pumpkin seeds
- 2 tablespoons balsamic vinegar
- Combine all ingredients, mix!
