It’s that time of year…. the time of year where you swap your lazy mornings for frantic, hurried, shove your breakfast in your mouth so you can get to school on time mornings. We have actually been going to school for three weeks already. I know! We start early! I have had a few requests to post lunch ideas, so here are a few from the past couple of weeks. This is the first year that I have had to pack a lunch for one of my girls. I know it’s only been a couple of weeks, and that it will get old eventually but I like it! It’s been fun seeing some of the different things I can pack for cold lunch. I keep it super simple, I don’t want to set expectations too high! The first lunch has two rice cakes (the one on the bottom doesn’t have any almond butter) one with almond butter and drizzled honey, applesauce (don’t forget the spoon! I already did!), carrots, and for her two snacks she has cucumbers and a banana. I just put an ice pack on the bottom of her lunch box and call it good!
I am loving the applesauce! My daughter loves it, and I can just throw it in! This lunch also has carrots, homemade Honey Whole Wheat Bread with a little butter she can spread (or pack it with it already spread), with peaches and string cheese for snacks.
Anyone else still have a TON of zucchini growing? I have about a billion zucchini muffins in my freezer ready to throw into lunches. My daughter loves them, but I try not to put them in every day so she won’t get too sick of them. I just used my Zucchini Bread recipe and made them into mini muffins (cook for 12 minutes). I also put in grapes, hummus with carrots and broccoli, as well as plain Triscuits and cheese. I forgot to show the snacks for this day, but they were almonds and peaches.
Can you see the frost on the muffin? You don’t have to defrost them, they thaw very quickly. Another thing I love to add is hard boiled eggs. One thing I learned from this lunch was to wrap up the almonds if they will be next to something else, other wise they will get soggy. I added a banana and peaches for snack.
